Dave’s background has led him to the understanding that most operational issues arise from a lack of proper operating systems. A thorough Business Plan is the backbone that builds the foundation for a strong concept. He also believes “You Get What You Measure For” so he comes with strength in defining clear goals and objectives with structures to support meeting those goals.
Most recently Dave has been the Director of Food and Beverage Concept Development and Operations for the LAB in Costa Mesa. Playing a pivotal role in the recent and wildly successful opening and operation of the Packing House in Anaheim he has led a cutting edge project featuring nearly 30 restaurants and bars under one roof. Property management, tenant mix and leasing, branding, marketing, design have all passed through Dave’s desk on this highly recognized venture. Attention to detail and authentic amenities are what he believes make a guest experience memorable and being a part of the latest in dining concepts and state-of-the-art technology doesn’t hurt. He also has developed an intimate knowledge of the operations and the proforma required to make a mix of restaurant and retail tenants work. Dave is also a state of California licensed real estate agent.
Dave has an instinct for operations and operators like few others. Dave’s recent consulting has found him teamed up with players like Islands, the Salt Creek Grille, Waterman’s at the Harbor, Stillwater, Bad to the Bone, Carbonara’s, Sunset’s, and many budding restaurateurs. Dave developed and owned BeachFire Bar and Grill. Taking it from an idea to three stores averaging $2,500,000 each with no partners and very little starting capital, Dave was recognized as a leader and generated incredible buzz in the restaurant community. Dave’s extensive food and beverage career also features roles with the Chart House, Lettuce Entertain You, and Bobby McGee’s – from the Caribbean to Hawaii and back. Born and raised in Orange County Dave has a deep understanding of the market.
